Bobby’s Lighter French Coconut Pie

Ingredients
- 1/2 cup sugar
- 2 large eggs
- 2 tablespoons melted Butter
- 1 tablespoon all purpose flour
- 1 cup low fat milk
- 3/4 cup unsweetened shredded coconut
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 1 (9 inch) unbaked pie shell
Directions
Preheat oven to 350 °F.
Beat the sugar and eggs in a large bowl until pale yellow. Whisk in the butter and flour until blended. Add the milk, coconut and both extracts. Pour into the prepared pie shell, transfer to a baking sheet, and bake until set, about 40 minutes. Chill pie for 2 hours before serving.
